The geographical area of the Colli del Trasimeno DOC is located in the province of Perugia, and includes a medium hill territory, located on the shores of Lake Trasimeno where you can do Wine Tasting Colli del Trasimeno.

The vines suitable for the production of wine Colli del Trasimeno DOC are predominantly black grapes with approximately 68% of the total surface area while currently the white grapes cover 32%. Among the black grapes we have predominantly Sangiovese, Ciliegiolo, Gamay del Trasimeno, Merlot and Cabernet Sauvignon, while among the white grapes we have predominantly Trebbiano toscano, Grechetto and Chardonnay.
For black grapes it is particularly important to limit productivity to within 9 t/ha, with the aim of maintaining a high content of anthocyanins and total polyphenols. In the territory of Colli del Trasimeno DOC high quality sparkling wines are also born. Vinsanto DOC is born from the vinification of white grapes (minimum 40% Trebbiano).
The best bunches of grapes are left to dry by hanging them on hooks or laying them on mats. Once the drying process is complete, the grapes are pressed and the resulting must is transferred to “caratelli” to which the mother of vinsanto obtained from the “lees” of the past production is immediately added. The caratelli are then placed in the attic as the strong temperature variations benefit the fermentation and the aromas of the wine.
For red wines
the vinification phase with fermentation in contact with the skins, the repeated punching down for a total extraction of the color and other components of the grape, lead to wines with an important and extremely balanced sensory profile. The control of malolactic fermentation and the introduction for certain typologies of the maturation phase in wood and subsequent finishing in the bottle, lead to an enrichment of spicy aromas, derived from the wood, which harmonize with the floral-fruity components, derived from the grapes.
