Amarone is a wine that is obtained by fermenting the dried grapes of the typical Valpolicella vines, namely Corvina (45-95%), Rondinella (5-30%) and Corvinone (up to 50% max in substitution of Corvina). Up to 25% of black grape varieties are allowed in the blend, authorized for the province of Verona, of which up to 15% generic non-aromatic and max. 10% of native Valpolicella varieties with a maximum of 10% for each individual vine (in fact the no longer explicitly mentioned Molinara).

In Amarone, fermentation is continued until all the sugars are consumed. In fact, it is a ruby-garnet colored wine sometimes with orange reflections, clear, with great body and structure. The alcohol content is usually high (in some cases even very high, although the specifications require a minimum alcohol content of 14% by volume). The traditional pairings of Amarone are with musso stew, pastissada de caval, braised meat in Amarone or mature hard cheeses.
